With the weather brightening, we want to spend more time outdoors. This often means less time devoted to cooking. Rebecca explains--"The full equation for kitchen nirvana is planning time + shopping time + prep time + cooking time."  Here is one of her delicious recipes that I love to put on fresh fish. Cook your fish with just a little bit of olive oil, salt & pepper. Put this salsa on top for a great flavor booster.

TriColor Pepper Salsa With Cherry Tomatoes

MAKES ABOUT 1 1/4 CUPS • PREP TIME: 10 minutes • COOK TIME: not applicable

Ingredients:

1/4 cup finely diced red onion
6 cherry tomatoes, halved
2 tablespoons finely diced red bell pepper
2 tablespoons finely diced
yellow bell pepper
3 tablespoons extra-virgin olive oil
1/4 cup chopped fresh basil or mint
1 1/2 tablespoons freshly squeezed lemon juice
1/2 teaspoon lemon zest
1 tablespoon chopped fresh parsley
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Preparation:

In a large bowl, combine all the ingredients. Cover and refrigerate
until ready to use.
