Turkey Tofu Lettuce Wraps

This is an easy dinner to assemble and will become a family favorite.  The secret ingredient--TOFU adds lots of flavor and is sure to be embraced by your harshest food critic.

Ingredients 

  • 1lb ground turkey 
  • 12 ounces extra-firm tofu (Trader Joes- teriyaki tofu) cut in ¼” cubes 
  • 1 medium Red Onion- chopped finely 
  • ¼ cup of fresh ginger-chopped one cup finely chopped carrots & celery 
  • 1/2 cup pine nuts – toasted or chopped cashews—optional 
  • 5 Tablespoons rice vinegar 
  • 4 Tablespoons soy sauce 
  • 2 Tablespoons sugar or honey 
  • 1 Tablespoon of vegetable oil 
  • Salt & Pepper to taste 
  • 16 to 20 iceberg or Boston butter lettuce leaves, rinsed and crisped 
  • About 3/4 cup hoisin sauce 

Preparation 

  • Heat I Tbs of oil in a medium frying pan. Cook onion until lightly golden. Add in carrots and celery and cook until softened. Mix in turkey and tofu and ginger. 
  • Add vinegar, soy sauce, and sugar to turkey until it is hot and liquid is mostly absorbed, 2 to 3 minutes. Stir in pine nuts. Add Asian Hot Sauce if you choose or salt/pepper to taste. 
  • Pile lettuce into a basket and spoon Hoisin sauce into a small bowl. Spoon turkey mixture in to lettuce leaves and add a little hoisin sauce. Wrap up to eat. 
You can skip the lettuce and serve over baby spinach and add in brown rice and the veggies of your choice.
