Sometimes you just want to serve a meal that makes everyone happy.  And wouldn't it be a huge bonus if it was a snap to make as well? This delicious Mexican-themed night works for everyone.  Whether you are trying to add in healthy beans and greens, feed hungry teenage athletes, or create something that can be kept warm for the stragglers---this is a great way to do it.  Take a moment to look over the serving suggestions so you can personalize this for your family's tastes.  

Fast & Easy Mexican Night

Prep Time: 30 minutes

Makes four main course servings

Ingredients

1 lb of 90-93% lean ground beef or ground turkey

One red onion ---coarsely chopped

3 cloves of garlic chopped

One 16oz jar of your favorite salsa---mild or spicy

1 TBS tomato paste

One 15oz can pink or small red beans---drained & rinsed well

One 6oz bag of spinach—shredded

One cup of shredded Mexican cheese (Monterey jack or cheddar)

Preparation

Saute onion & garlic in a bit of olive oil until lightly golden.  Add in ground meat and cook until the pink disappears.  Add in salsa & beans and tomato paste.  Add any seasoning of your choice including chili powder, cayenne pepper, a splash of lime juice, etc.  Cook for 20 minutes on low heat.  Sprinkle ¼ cup of cheese on each serving.

Serving Suggestions

Serve with sautéed slivered yellow & red peppers or any vegetable of your choice. 

Serve on top of shredded greens such as baby spinach (or add in shredded greens to meat mixture 10 minutes before cooking is complete).

Serve in whole wheat tortillas or on top of brown rice.
