Waldorf Re-Imagined
Want to take a day off from cooking?  if your answer is YES, this quick, easy and incredibly delicious salad is sure to become a new favorite.  Back in high school in NYC, I would dress up in a large carrot suit and hand out flyers advertising a new restaurant in Rockefeller Center.  A great way to make some spending money, I also learned how to make this scrumptious salad.  The best news is that there is no cooking necessary and it can be put together in less than 10 minutes.  Take a real short cut and buy the already shredded carrots.  This "Go To" dish works for lunch or dinner.  So refreshing!
 
Ingredients:
2 carrots,  shredded
1 apple, chopped (Granny Smith works best)
1/4 cup walnuts chopped and toasted
1/2 cup of cottage cheese
1-2 TBS raisins or craisins or blueberries
 
Preparation:
Layer all ingredients in a shallow bowl starting with carrots.  Add in apple and walnuts.  Next layer on the scoop of cottage cheese and sprinkle with raisins.
