Lemony Chickpeas

The Center for Science in the Public Interest publishes a monthly nutrition newsletter.  The "Dish of the Month" offers a recipe that is easy to make and scores high on nutrition.  But this month--the dish knocks it out of the ballpark on flavor too!  My secret ingredient is to add in whatever fresh herb you have on hand.  Sage, basil or flat leaf parsley are near perfect enhancements.
 
Ingredients:
15oz can of chick peas --drained and rinsed well
2 Tbs fresh lemon juice
2 Tbs plain greek yogurt
2 Tbs extra virgin olive oil
2 tsp tahini
Salt & pepper to taste
 
Preparation:
In a medium bowl, whisk together lemon juice, greek yofurt, olive oil and tahini.  Toss with chickpeas and salt & pepper.  Add in the herb of your choosing.
 
Makes 2 cups
