Picked up a fragrant melon at Trader Joe's today. A bit small for a cantaloupe but it found it's way into my cart. Eager to mix my favorite spring time lunch----crumbled feta, toasted walnuts and melon---I cut in to discover my melon was not orange but pale green. Little did I know that the Galia melon is a hybrid of honey dew and cantaloupe created by an Israeli farmer and named for his daughter. Sweet and delicious, it won't disappoint.

1-2 cups cubed melon
1/4 cup toasted walnuts, chopped
1/4 cup crumbled feta
 
Mix together and enjoy!
