"What's for dinner?"
With the weather brightening, we want to spend more time outdoors. This often means less time devoted to cooking. Fear not, my colleague Rebecca Katz is sharing her tried and true solutions for answering the age old question--"WHAT'S FOR DINNER?" Visit her website for great recipe ideas.

Rebecca explains--"The full equation for kitchen nirvana is planning time + shopping time + prep time + cooking time."  Here is one of her delicious recipes that I love to put on fresh fish. Cook your fish with just a little bit of olive oil, salt & pepper. Put this salsa on top for a great flavor booster.

TriColor Pepper Salsa With Cherry Tomatoes

MAKES ABOUT 1 1/4 CUPS • PREP TIME: 10 minutes • COOK TIME: not applicable


1/4 cup finely diced red onion
6 cherry tomatoes, halved
2 tablespoons finely diced red bell pepper
2 tablespoons finely diced
yellow bell pepper
3 tablespoons extra-virgin olive oil
1/4 cup chopped fresh basil or mint
1 1/2 tablespoons freshly squeezed lemon juice
1/2 teaspoon lemon zest
1 tablespoon chopped fresh parsley
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper


In a large bowl, combine all the ingredients. Cover and refrigerate
until ready to use.
