White Bean Bruschetta

I am always looking for delicious ways to eat more beans.  Cannellini beans pack a surprisingly rich and varied array of nutrients that are vital for good health. This dip is simple to prepare and is a perfect starter or filling snack that pairs beautifully with cut up veggies or whole wheat crusty bread.
 
White Bean Bruschetta 
 
Ingredients: 
2 – 15oz cans of white Cannellini Beans 
1 large head of Garlic 
2-4Tbs of Olive Oil Salt & Pepper to taste 
Sage Leaves – optional 
 
Preparation: 
Rinse white beans thoroughly in colander and place in a food processor. 
Brush outside of garlic with a bit of the olive oil. Place in a 300 degree oven for 20 minutes. Let cool and “pop out” the garlic cloves. 
Place beans & garlic in food processor. Pulse several times to blend.  Add olive oil gradually. 
Add salt & pepper to taste. 
 
Optional: 
1). For a more rustic texture: Reserve ½ cup of whole beans on the side and mash with a fork. Add to pureed dip. 
2). Julienne fresh sages leaves or basil and add before serving. 
 
Serve with fresh cut veggies of your choice for dipping. 
 
One serving ---1/4 cup 
 
Can be prepared 24 hours in advance, keeps for three days in the fridge.
