Salmon Burgers AKA Croquettes

Everytime I make this dish, I ask myself, why I don't make them more often??? They remind me of my childhood where canned salmon was plentiful.  Today, it is easy to find canned wild salmon that is skinless and boneless and very budget friendly. They are so easy! Literally smash all the ingredients in a bowl and mold into a round burger and bake.These "crockets" as we used to call them in my family are full of protein, omega-3s and big on flavor. They are perfect for weeknight dinners and pair well with your favorite green salad.

Ingredients:

1 - 15oz can Wild Salmon

1 cup grated/shredded Carrots or Red Peppers

2TBS fresh Parsley

1 Yellow Onion –chopped finely

1 cup Corn Flake Crumbs or Bread Crumbs

2 Eggs

1 TBS Lemon Juice

¼ TSP Salt & Dash of White Pepper

1 cup 1% Milk

Preparation:

Preheat oven to 350 degrees

Combine all ingredients in a large mixing bowl and shape in to about 6-8 individual patties.

Place croquettes on a greased baking sheet and bake for 30-40 minutes.  Turn half way thru cooking.  Should be crisp/lightly browned on the outside and moist on the inside.
