Spring is here and so are ASPARAGUS!!!

Dare I say that they are Mother Nature's "gift of candy" especially when roasted gently. In case you need more reasons to eat some today, here are three facts that you may not have known about these gems! 

1) They are chock full of the soluble fiber inulin. Inulin helps the good bacteria in your gut thrive which is beneficial to digestion and strengthens your immune system.

2) Asparagus are high in potent antioxidants especially glutathione. This detoxifying compound is known for its ability to attack carcinogens and free radicals before they cause damage in your body. 

3) A natural diuretic, asparagus have an amino acid asparagine which is beneficial for those who have high blood pressure or suffer from excess fluid retention.

Preheat oven to 375 degrees. Wash asparagus gently and trim off 1-2 inches of the rough bottom stem. Place on a baking sheet. Drizzle with olive oil and a sprinkle of salt & pepper. Roast for 15 minutes or until lightly carmelized.
